  Fromtheextravagantvalueplaceduponthearticle,Iverilybelieve,thatwithabushelofcommonLiverpoolsalt,alltherealestateinTypeemighthavebeenpurchased。Withasmallpinchofitinonehand,andaquartersectionofabread-fruitintheother,thegreatestchiefinthevalleywouldhavelaughedatalltheluxuriesofaParisiantable。
  Thecelebrityofthebread-fruittree,andtheconspicuousplaceitoccupiesinaTypeebilloffare,inducesmetogiveatsomelengthageneraldescriptionofthetree,andthevariousmodesinwhichthefruitisprepared。
  Thebread-fruittree,initsgloriousprime,isagrandandtoweringobject,formingthesamefeatureinaMarquesanlandscapethatthepatriarchalelmdoesinNewEnglandscenery。Thelattertreeitnotalittleresemblesinheight,inthewidespreadofitsstalwartbranches,andinitsvenerableandimposingaspect。

  Themostsimplemannerinwhichthisoperationisperformed,and,Ithink,thebest,consistsinplacinganynumberofthefreshly-pluckedfruit,wheninaparticularstateofgreenness,amongtheembersofafire,inthesamewaythatyouwouldroastapotato。Afterthelapseoftenorfifteenminutes,thegreenrindembrownsandcracks,showingthroughthefissuresinitssidesthemilk-whiteinterior。Assoonasitcoolstherinddropsoff,andyouthenhavethesoftroundpulpinitspurestandmostdeliciousstate。Thuseaten,ithasamildandpleasingflavour。
  Sometimesafterhavingbeenroastedinthefire,thenativessnatchitbrisklyfromtheembers,andpermittingittoslipoutoftheyieldingrindintoavesselofcoldwater,stirupthemixture,whichtheycall“bo-a-sho。“Inevercouldendurethiscompound,andindeedthepreparationisnotgreatlyinvogueamongthemorepoliteTypees。
  Thereisoneform,however,inwhichthefruitisoccasionallyserved,thatrendersitadishfitforaking。Assoonasitistakenfromthefiretheexteriorisremoved,thecoreextracted,andtheremainingpartisplacedinasortofshallowstonemortar,andbrisklyworkedwithapestleofthesamesubstance。Whileonepersonisperformingthisoperation,anothertakesaripecocoa-nut,andbreakingitinhalf,whichtheyalsodoverycleverly,proceedstogratethejuicymeatintofineparticles。Thisisdonebymeansofapieceofmother-of-pearlshell,lashedfirmlytotheextremeendofaheavystick,withitsstraightsideaccuratelynotchedlikeasaw。
  Thestickissometimesagrotesquely-formedlimbofatree,withthreeorfourbranchestwistingfromitsbodylikesomanyshapelesslegs,andsustainingittwoorthreefeetfromtheground。
  Thenative,firstplacingacalabashbeneaththenose,asitwere,ofhiscurious-lookinglog-steed,forthepurposeofreceivingthegratedfragmentsastheyfall,mountsastrideofitasifitwereahobby-horse,andtwirlingtheinsideofoneofhishemispheresofcocoa-nutaroundthesharpteethofthemother-of-pearlshell,thepurewhitemeatfallsinsnowyshowersintothereceptacleprovided。
  Havingobtainedaquantitysufficientforhispurpose,heplacesitinabagmadeofthenet-likefibroussubstanceattachedtoallcocoa-nuttrees,andcompressingitoverthebread-fruit,whichbeingnowsufficientlypounded,isputintoawoodenbowl-extractsathickcreamymilk。Thedeliciousliquidsoonbubblesroundthefruit,andleavesitatlastjustpeepingaboveitssurface。
  Thispreparationiscalled“kokoo,“andamostlusciouspreparationitis。Thehobby-horseandthepestleandmortarwereingreatrequisitionduringthetimeIremainedinthehouseofMarheyo,andKory-Koryhadfrequentoccasiontoshowhisskillintheiruse。
